An old Italian heirloom tomato, dating back to the early 1900’s. This variety came from a market in Catania Sicily.
It is very similar to the Costollutto Fiorentina and Genovese in its flattened and fluted shape, as well as its bright red color and full bodied flavor, but because of the minerals in the soil and climate conditions in Sicily, the flavor is much more intense. Traditionally the costolutto tomatoes are used for salads or canning.
