Yacón is a species of perennial daisy grown widely from the Andes to Colombia to northern Argentina. It is praised for its crisp, sweet tubers. The plant is grown from spring until late fall, and the tubers are harvested in December to January after the cold temperatures have started.
The cold curing helps to develop its sweet flavor. When the tubers are cured, they turn orange in color become as sweet as apples. The texture is like jicama crisp, juicy, and crunchy.
There are health benefits to eating it as it contains high levels of prebiotic fiber that feeds your microbiome and can help to enhance your immune system. It is also good for diabetics because the root contains an indigestible fiber known as fructooligosaccharides (FOS) or inulin and your body can’t digest it.
