Yellow Eggplant

Native to India, Yellow Eggplants are small and about 1-2 inches diameter. They have smooth, white skin that changes to golden yellow when mature. They make a beautiful addition to the dinner plate. The flavor is bitter and sour and is good in sauté and roasted dishes or cooked in coconut milk. In Thailand Yellow Eggplant is used to treat stomach ulcers, and a famous fairytale was created for this special fruit “the story of Kao and The Eggplant Flower”. It is The Cinderella of Thailand. In then story the poor maid marries the young prince upon bringing him fruit from the magical eggplant.
