This chili pepper got its name because of its close resemblance to a “tam o’ shanter hat”. Scotch Bonnet peppers are found in West African and Caribbean cuisine. The Scotch bonnet peppers have between 100,000–350,000 Scoville units. The flavor is hot and sweet with notes of fruit. They are an essential ingredient in Jerk sauce and also are used as a pickled side to many meat dishes.
