Cilantro, the Spanish word for Coriander (Coriandrum sativum) is a fantastic herb that you can use all parts of the plant. While the tender young leaves are used extensively, the seeds are dried and ground and used as spice for many middle eastern cultures. It is an annual herb that grows best in mild climates and doesn’t do well in the honest time of summer because it will go directly to flower and stop producing leaves. While many people love the flavor and report that it tastes earthy with notes of citrus, about 1/4 of the population can’t stand the flavor and think it taste lie soap.
