The Long Island Cheese Squash is mature in about 105 days. This squash is loved for its silky smooth texture. It is also cultivated for its shelf life.It is also caught after for being used in pumpkin pie. Its name is a combo of its growing area and for its shape as a cheese wheel. This squash has almost disappeared after the introduction of the modern day squash which is a true shame since it is one of the oldest varieties still cultivated in the United States The Long Island Cheese squash may be native to Central or South America but came to North American from traveling trade lines. In 1809 it became a commercial variety in the seed catalog by Bernard McMahon of Philadelphia. The Long Island Cheese Squash once was a favorite among Atlantic Seaboarders until the early 1960’s when the modern pumpkin was advertised as better for commerce.Since the the Long Island Seed Project was created to preserve this variety.
